Hi Howie,
You do not need two probes to get circular polarization
in a patch feed just like you do not need to feed the two
dipoles in a turnstile in quadrature to get it.
You can make antennas "self-phasing" by making the feed
impedances 50+j50 and 50-j50 in each dimension and using a
single feed point. This will give you a 50 ohm load but
each leg will be 45 degrees out of phase with the source.
This is the usual way to get circular polarization with a
patch.
