Indeed.  If I had that sort of station, I'd be spending my time on AO-10.
FM is at its best when you're running QRP, and it can be quite a lot of fun
there.  But when you have a bit of gear behind you, FM is much like shooting
fish in a barrel.

FM is also great for public demonstrations, as the strong signals and clear
audio are impressive to the average person.  I've done a few public
demonstrations, and have enjoyed them immensely.  The regular operators on
the birds here make it easy too, they guys are pretty good when there's
something unusual happening on the pass.

But if one has the right gear, go chase AO-10.  I would be doing just that,
if I could manage to put up suitable antennas (and no doubt have  ball with
the DX :) ).
